Happy (Late) Cinco de Mayo!

Yesterday I celebrated this fun, festive day with a margarita (or two) and some home made chicken fajitas. They were super easy AND nutritious - below is a twist on this traditional recipe:

Ingredients:
Red and green bell peppers
Onion
Rice & Beans (side)
Chicken 
Ranch dressing
Lettuce
Tomatoes
Avocado
Sour cream
Salsa


1. Sauté red & green bell peppers and onions.


2. cook rice & beans (I cheated and used Zatarain's).

3. Grill chicken and coat with ranch dressing.

4. Dice tomatoes and lettuce, and slice avocado (salsa & sour cream optional).
